Slow Crumb is a small, free reference for baking sourdough bread at home. It collects the fundamentals in one place, in plain language, without ads, tracking or a newsletter.
How to use it
The guides are numbered in the order a first loaf needs them. Weights are in grams, because bread formulas only work by weight. Temperatures are given in °C with °F alongside.
A note on times
Every time in these guides is a starting point. Flour, starter strength and above all temperature change how fast dough ferments, so the guides also describe what the dough should look and feel like at each stage. Trust the dough over the clock.
Food safety
A healthy starter smells sour, yeasty or fruity. Discard it and start again if it grows fuzzy mould or shows pink or orange streaks.
